Speakers will provide a cursory overview of the history and production process of your spirit of choice, followed by an instructional tasting intended to help you to identify and enjoy the subtler aspects of the chosen spirits.

John is a tequila enthusiast who has learned the trade one distillery at a time. He has sought out informative courses and certifications from distilleries and brands such as Patron Tequila Certified Specialist and Clase Azul Tequila Certificate of Recognition, in addition to the Mexican Council of Tequila Regulation, El Consejo Regulador Del Tequila, A.C. “AWARD T” Program. John has honed his fluency in all things Agave - visiting 9 different distilleries in Jalisco, including 11 different invited personal distillery visits. He has put his knowledge into practice, barrel selecting 15 unique barrels with 7 different tequila brands. He currently has over 75+ tequila speaking engagements and counting.
John shares a heart with San Antonio and has dedicated his efforts to volunteering in San Antonio’s Food and Beverage Associations. He stays involved with board seats at Visit San Antonio, San Antonio Hotel Lodging Association, San Antonio Restaurant Association, Valero Alamobowl Committee, San Antonio Riverwalk Association, United States Bartender’s Guild San Antonio Chapter member, San Antonio Cocktail Conference staff, and the University of Hilton-San Antonio, in addition to spending 20+ years on the SA River Walk working in the food and beverage industry.
James' culinary passion and expertise breathes life into the San Antonio, Texasfood and beverage scene. Chef Moore, who grew up in San Antonio and spent more than a decade in restaurants on the West Coast, cut his chops locally as Executive Chef and Operating Partner on the opening team of Max’s Wine Dive in 2010 and later, at its sister restaurant Boiler House at the Pearl Brewery in 2012.
